For the Meatloaf:
- 1 ½ lbs ground chicken

- 1 egg

- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1 tsp Italian seasoning
- ½ tsp salt
- ½ tsp black pepper
For the Glaze:
- ⅓ cup ketchup
- 1 tbsp brown sugar
- 1 tsp apple cider vinegar
- ½ tsp garlic powder
Instructions
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- Prepare the meatloaf mixture: In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, onion, garlic, egg, milk, ketchup, Worcestershire sauce, mustard, Italian seasoning, salt, and pepper. Mix until just combined—don’t overmix!
- Shape the meatloaf: Transfer the mixture to the prepared baking sheet and form it into a loaf shape, or press it into a loaf pan.
- Make the glaze: In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, and garlic powder. Spread half of the glaze over the meatloaf.
- Bake for 35-40 minutes, then remove from the oven and spread the remaining glaze on top.
- Continue baking for another 10-15 minutes, or until the internal temperature reaches 165°F (74°C).
- Rest and serve: Let the meatloaf rest for 5-10 minutes before slicing. Serve warm with your favorite sides!
