For the Meatloaf:

Instructions

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  • Prepare the meatloaf mixture: In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, onion, garlic, egg, milk, ketchup, Worcestershire sauce, mustard, Italian seasoning, salt, and pepper. Mix until just combined—don’t overmix!
  • Shape the meatloaf: Transfer the mixture to the prepared baking sheet and form it into a loaf shape, or press it into a loaf pan.
  • Make the glaze: In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, and garlic powder. Spread half of the glaze over the meatloaf.
  • Bake for 35-40 minutes, then remove from the oven and spread the remaining glaze on top.
  • Continue baking for another 10-15 minutes, or until the internal temperature reaches 165°F (74°C).
