For the Cream Cheese Frosting:
- 8 oz cream cheese, softened
- ¼ cup unsalted butter, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
Instructions
Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Combine wet ingredients: In a large bowl, whisk melted butter, brown sugar, and granulated sugar until smooth. Add eggs and vanilla extract, mixing until well combined.
- Add carrots & mix-ins: Stir in the grated carrots, walnuts, and crushed pineapple (if using).
- Combine wet and dry: Gradually fold the dry ingredients into the wet mixture until just combined.
- Bake: Pour the batter into the prepared pan and spread evenly. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
- Cool completely before frosting.
- Prepare the frosting: Beat the softened cream cheese and butter together until smooth. Add powdered sugar and vanilla extract, beating until creamy.
- Frost and serve: Spread the cream cheese frosting over the cooled bars, slice into squares, and enjoy!
