  • ¼ cup (50g) brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon red food coloring (liquid or gel)
  • 1 teaspoon white vinegar
  • ½ cup (90g) white chocolate chips (plus extra for topping, optional)

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  • In a large mixing bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the egg, vanilla extract, red food coloring, and vinegar, mixing until well combined.
  • Gradually mix in the dry ingredients until just combined. Be careful not to overmix.
  • Fold in the white chocolate chips.
  • Scoop out tablespoon-sized portions of dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 9-11 minutes, or until the edges are set but the centers are still slightly soft.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
